Heidi<p>I took eggs &amp; butter out to come to room temp to bake today but instead of doing that, I worked. It was a long week and I usually work light on Fridays, but my boss is back from vacation. We had a lot to communicate. Heidi<p>I took my time decorating decorating this one and I think it looks ok. One of the boys asked what we were celebrating and I said, "Nothing. I just wanted cake." I'll post another photo once we cut it. I thought the cake was going to be dry because the dome cracked but I had a few bites (from leveling it before frosting) and it should be fine. I kept good notes. I'll try to find the motivation to put it in my baking notebook. Heidi<p>Here's the finished cake. It was so freaking delicious. I added heath bar toffee crunchies on top and in the middle layer of frosting. That bit of crunch is so satisfying. This is an an uncut 8" round black chocolate <a href="https://mastodon.social/tags/cake" class="mention hashtag" rel="nofollow noopener noreferrer" target="_blank">#<span>cake</span></a> with lighter chocolate frosting using Hershey's cocoa. And, gluten free for my birthday friend with Celiac's. One was with the help of a pancake mix from Trader Joe’s; the other was using a homemade GF mix from America’s Test Kitchen to make a pie crust and use it to shape fruit-filled hand pies. susannah has moved<p>Ok <a href="https://octodon.social/tags/celiacs" class="mention hashtag" rel="nofollow noopener noreferrer" target="_blank">#<span>celiacs</span></a> let's talk about pie crust.</p><p>I do not have the time or energy to fuss with roll out crusts even when there's gluten to hold the damn thing together, and the gf pie crusts at my grocery store are actively gross.</p><p>Also, I've found that gf crusts are <em>super</em> prone to burning.</p><p>So here's what I do.</p><p>1) make this dough and press it into my dish<br><a href="https://glutenfreeeasily.com/new-gluten-free-never-fail-pie-crust-the-best-gluten-free-pie-crust/" rel="nofollow noopener noreferrer" translate="no" target="_blank"><span class="invisible">https://</span><span class="ellipsis">glutenfreeeasily.com/new-glute</span><span class="invisible">n-free-never-fail-pie-crust-the-best-gluten-free-pie-crust/</span></a></p><p>It is extremely forgiving re: the all purpose gf flour you use. I usually use Bob's Red Mill All Purpose (chickpea based) or a generic rice based one and it turns out fine.</p><p>I also add a little xanthum gum since my flour blends don't have it.</p><p>2) prick it all over with a fork and then add a pie shield to protect the edges from burning. </p><p>I use <a href="https://www.leevalley.com/en-ca/shop/kitchen/bakeware/pastry-tools/69691-adjustable-pie-shield?item=EV199" rel="nofollow noopener noreferrer" translate="no" target="_blank"><span class="invisible">https://www.</span><span class="ellipsis">leevalley.com/en-ca/shop/kitch</span><span class="invisible">en/bakeware/pastry-tools/69691-adjustable-pie-shield?item=EV199</span></a></p><p>3) now bake it at 350 for 10-15 minutes. It's done when it gets a little golden brown.</p><p>4) let it cool a bit and then FREEZE THE CRUST. This is the most important step for burning prevention. I cover it with saran wrap before I do this. </p><p>I usually do this a day or more in advance of making the actual pie or quiche, but I think an hour or two in advance is probably fine?</p><p>5) Now preheat your oven and make your filling. Once both those things are done, take your pie crust out and fill it up. Add the pie shield back and put the immediately put the pie in the oven so it's as frozen as possible when it goes in.</p><p>This crust is tasty and very fast - just 20-30 minutes from deciding to do it to pulling it out of the oven. </p><p>Obviously it doesn't work for top crusts or lattices, but I've just switched to putting crumbles on top of pies that call for that. I live in an apt so I'm afraid my neighbors will hear so I am screaming into pillow and praying/begging that it'll be over soon. 😭 It took so many hours...6 or 7 hours.</p>
