My #creative journey w/a #JimmyBuffett twist began w/my ‘08 “Seaside Margaritas” #sketch. Inspired by his legendary song, “Margaritaville,” my inaugural ode was a pitcher of frozen #margaritas at a beachside bar w/an El Chico garter glass. The pitcher looks like it’s about to tip over—maybe a happy customer bumped the table! I had fun w/this one. I look forward to creating more whimsical goodies like these.

Pineapple Jalapeño Pitcher Margaritas (makes 4 ish servings)
Jalapeño Simple Syrup Ingredients
- 1/2 c. granulated sugar
- 1 c. water
- 1-2 jalapeno peppers, sliced
- 1 2" long strip of lime peel

For the Pineapple Pitcher Jalapeño Margaritas
- 1 c. blanco tequila
- 3/4 c. pure pineapple juice
- 1/2 c. orange liqueur
- ice, as needed

Garnish, optional
- 1 tbsp coarse sea salt
- 1/4 tsp chili powder
- lime wedges
- jalapeño slices
- fresh mint sprigs

For the Jalapeño Simple Syrup:
In a medium saucepan, combine the sugar, water, jalapeño & lime peel. Bring to a rolling simmer over medium-high heat & cook, stirring frequently, until the sugar has completely dissolved. Reduce to medium-low & continue simmering, stirring occasionally, for 15 minutes. Remove from heat & set aside to cool for at least 20 minutes.

Once cool, strain syrup into a large measuring cup, through a fine mesh strainer. Discard jalapeño peppers & lime peel. Set syrup aside until needed.

For the Pineapple Jalapeño Pitcher Margaritas:
In a large pitcher combine the tequila, pineapple juice, lime juice & orange liqueur. Pour in all of the simple syrup & stir well to combine.
Add a few slices of jalapeño & a few wedges of pineapple into the pitcher if desired.

Garnish (Optional):
To salt the rim of the glasses, combine the salt & chili powder in a shallow dish. Run the edge of a lime around a glass, then dip the glass into the chili salt combination. Fill glasses with ice, then pour margarita mix on top. Garnish with a pineapple wedge,
a few jalapeño slices, and a sprig of mint and serve.

You can easily double his recipe if you want a larger pitcher of margs. I adapted this recipe & figured out the measurements that work for me, but feel free to adjust spice, flavor, and mixture to your liking.
